These leaves can be harvested a few at a time to leave the plant in the ground to continue yielding. Once mature, Monty Don recommends simply stripping off the tender outer leaves from the stem (which is too tough to eat) by 'stripping' the leaf with one hand upwards whilst gripping the stem base with the other.

Looks dark green; tastes dark green. I'd never eaten this before but I'm a convert.
